Is there a documented process on how to remove and replace the two dowel pins on either side of the rear of the block?

Why remove them?
I imagine you’d drift them from behind. The only time I’ve ever seen them removed is when blocks are redrilled (see image in attached link)

I need to put in longer ones to accommodate an adaptor plate. All the instructions have is "Remove original engine dowels".

You can get a dowel removal kit which I have seen work.

For anyone else looking to do the same...
Find a G clamp and ring (I used the one from a ball joint remover set) plus a 2 inch long 3/8 bolt.
Put the bolt in the hole behind the dowel pin, put the ring around the protruding dowel, and screw the clamp tight around both. The dowel will push out.
